Odtisnjenost hrane
Sprememba prehrane je resnična in merljiva. To je tudi področje, kjer znotraj-kategorijska variacija pogosto presega razliko med kategorijami, o kateri so ljudje obveščeni.
Kaj je robustno
Ena ugotovitev preživi vsak metodološki argument: goveje meso in jagnjetina imata bistveno višje emisije na enoto beljakovin kot karkoli drugega, predvsem zaradi enteričnega metana in rabe zemljišč. Mleko sledi. Vse ostalo je daleč zadaj.
Pregledi okolju prijaznih diet [4] in prehranskih vzorcev, ocenjenih skupaj za zdravje in trajnost [1], potrjujejo, da je zmanjšanje proizvodov prežvekovalcev največja prehranska vzvod, in da se na splošno ujema z zdravstvenimi priporočili, namesto da bi bila v nasprotju z njimi.
Sprememba prehrane in emisije
Kje postane zmedeno
Pod nivojem prežvekovalcev preproste razvrstitve odpovejo. Ocena življenjskega cikla specifičnih proizvodov ugotavlja, da variacija znotraj kategorije pogosto presega variacijo med kategorijami — proizvajalci z največjim vplivom pri nizko vplivni hrani lahko presegajo proizvajalce z najmanjšim vplivom pri hrani z višjim vplivom.
- Prevoz je običajno majhen. Hrana na poti je manjši dejavnik pri večini proizvodov; metoda proizvodnje prevladuje. Zrakoplovno prepeljana hrana je izjema in redko je označena.
- Lokalno ni avtomatično ceneje. Proizvodnja v ogrevanih rastlinjakih v bližini lahko preseže proizvodnjo na polju daleč stran skupaj s prevozom.
- Embalaža je običajno majhna v primerjavi s hrano in lahko zmanjša skupni vpliv z preprečevanjem odpadkov.
- Odpadi so veliki. Hrana, ki jo zavržemo, nosi svoj celoten odtis proizvodnje in ne prinaša ničesar.
- Sezonsko in neogrevano premaga lokalno. Koristna heuristika ni razdalja, temveč metoda gojenja.
Označevanje ogljika
Označevanje ogljika na hrani je bilo preučeno, in ugotovitve odražajo literaturo o označevanju hranil, obravnavano na naši spletni strani o dokazih o oznakah hrane: oznake zmerno spreminjajo vedenje, razumevanje je neenakomerno, in učinek reformulacije na proizvajalce je morda pomembnejši od učinka na potrošnike.
Dodatna težava je, da je številka ogljika veliko manj standardizirana kot številka hranil. Dva proizvajalca lahko izračunata zelo različne številke za isti izdelek z uporabo upravičenih metod, kar naredi primerjavo med proizvodi manj zanesljivo, kot to nakazuje oznaka.
Kaj spreminja vedenje
Meta-analiza intervencij za prehrano na podlagi aplikacij [3] in dela o mindfulnessu in trajnostnih dietah [2] ugotavlja običajne majhne učinke. Strukturni dejavniki — kaj je na meniju, kaj je na višini oči, kakšna je privzeta možnost — bolj zanesljivo premikajo porabo kot informacije.
