Potravinová stopa
Zmena stravy je reálna a merateľná. Je to tiež oblasť, kde variabilita v rámci kategórií často prevyšuje rozdiel medzi kategóriami, o ktorých sa hovorí.
Čo je robustné
Jedno zistenie prežije každú metodologickú diskusiu: hovädzie a jahňacie mäso má oveľa vyššie emisie na jednotku bielkovín ako čokoľvek iné, predovšetkým prostredníctvom enterického metánu a využívania pôdy. Mlieko nasleduje. Všetko ostatné je ďaleko za nimi.
Recenzie ekologicky ochranných diét [4] a stravovacích vzorcov hodnotených spoločne z hľadiska zdravia a udržateľnosti [1] potvrdzujú, že zníženie produktov z prežúvavcov je najväčším stravovacím pákom a že sa zvyčajne zhoduje so zdravotnými odporúčaniami, namiesto toho, aby s nimi konfliktovalo.
Zmena stravy a emisie
Kde to je zložité
Pod úrovňou prežúvavcov sa jednoduché poradia rozpadnú. Hodnotenie životného cyklu konkrétnych produktov zistilo, že variabilita v rámci kategórie často prevyšuje variabilitu medzi kategóriami — najvyššie dopadové producenti nízko dopadovej potraviny môžu prevyšovať najnižšie dopadové producenty vysoko dopadovej potraviny.
- Doprava je zvyčajne malá. Potravinové míle sú pre väčšinu produktov minoritným faktorom; metóda výroby dominuje. Produkty letecky prepravované sú výnimkou a zriedka sú označené.
- Lokálne nie je automaticky nižšie. Vyhrievaná skleníková produkcia v blízkosti môže prevyšovať poľnú produkciu ďaleko plus prepravu.
- Balenie je zvyčajne malé v porovnaní s potravinami a môže znížiť celkový dopad tým, že zabráni odpadu.
- Odpadu je veľa. Potraviny vyhodené nesú svoju plnú produkčnú stopu a nič nedodávajú.
- Sezónne a nevyhrievané prekonáva lokálne. Užitečná heuristika nie je vzdialenosť, ale metóda pestovania.
Označovanie uhlíka
Označovanie uhlíka na potravinách bolo preskúmané a zistenia odrážajú literatúru o označovaní výživy pokrytú na našej stránke dôkazov o potravinových etiketách: etikety mierne menia správanie, porozumenie je nerovnomerné a efekt reformulácie na producentov môže byť dôležitejší než efekt na spotrebiteľov.
Ďalšou ťažkosťou je, že číslo uhlíka je oveľa menej štandardizované ako číslo výživy. Dvaja producenti môžu vypočítať veľmi odlišné čísla pre ten istý produkt pomocou obhájiteľných metód, čo robí porovnanie medzi produktmi menej stabilným, než naznačuje etiketa.
Čo mení správanie
Meta-analýza intervencií založených na aplikáciách [3] a práca na mindfulness a udržateľných diétach [2] nachádzajú obvyklé malé efekty. Štrukturálne faktory — čo je na menu, čo je na úrovni očí, aká je predvolená možnosť — ovplyvňujú spotrebu spoľahlivejšie než informácie.
