Hva er robust

Én funn overlever hver metodologisk diskusjon: storfekjøtt og lam har langt høyere utslipp per enhet protein enn noe annet, hovedsakelig gjennom enterisk metan og arealbruk. Melk følger. Alt annet ligger langt bak.

Gjennomganger av miljøbeskyttende dietter [4] og av kostholdsmønstre vurdert samlet for helse og bærekraft [1] bekrefter at reduksjon av drøvtyggerprodukter er den største kostholdsmessige faktoren, og at det vanligvis samsvarer med helseanbefalinger i stedet for å være i konflikt med dem.

Kostholdsendring og utslipp

Hvor det blir rotete

Under drøvtyggernivået bryter enkle rangeringer sammen. Livssyklusanalyse av spesifikke produkter viser at variasjonen innen en kategori ofte overstiger variasjonen mellom kategorier — de høyeste påvirkerne av en lavpåvirkende mat kan overstige de laveste påvirkerne av en høyere påvirkende.

  • Transport er vanligvis liten. Matkilometer er et mindre begrep for de fleste produkter; produksjonsmetode dominerer. Luftfraktede produkter er unntaket, og de er sjelden merket.
  • Lokal er ikke automatisk lavere. Oppvarmet drivhusproduksjon i nærheten kan overstige feltproduksjon langt unna pluss frakt.
  • Emballasje er vanligvis liten i forhold til maten, og kan redusere total påvirkning ved å forhindre avfall.
  • Avfall er stort. Mat som kastes bærer sitt fulle produksjonsfotavtrykk og gir ingenting.
  • Sesongbasert og uoppvarmet slår lokal. Den nyttige heuristikken er ikke avstand, men vekstmetode.

Karbonmerking

Karbonmerking på mat har blitt studert, og funnene gjenspeiler litteraturen om næringsmerking dekket på vår matetikettbevis nettside: etiketter endrer atferd moderat, forståelsen er ujevn, og reformuleringseffekten på produsenter kan være viktigere enn forbrukereffekten.

Den ekstra vanskeligheten her er at et karbonmål er langt mindre standardisert enn et næringsmål. To produsenter kan beregne svært forskjellige tall for det samme produktet ved hjelp av forsvarlige metoder, noe som gjør sammenligning på tvers av produkter mer usikker enn etiketten antyder.

Hva endrer atferd

Meta-analyse av app-baserte kostholdintervensjoner [3] og arbeid med mindfulness og bærekraftige dietter [2] finner de vanlige små effektene. Strukturelle faktorer — hva som er på menyen, hva som er i øyehøyde, hva standardalternativet er — påvirker forbruket mer pålitelig enn informasjon gjør.

Bør jeg bli veganer?
Det reduserer matutslipp betydelig. Det meste av den oppnåelige reduksjonen kommer fra å kutte drøvtyggerkjøtt og melk, noe som ikke krever å gå hele veien.
Betyr matkilometer noe?
Vanligvis mye mindre enn produksjonsmetode. Luftfraktede produkter er unntaket.
Er lokal alltid bedre?

Hva med havre- versus melk?
Plantebaserte melker er betydelig lavere enn melk i hele LCA-litteraturen. Forskjellene mellom plantebaserte melker er mindre enn gapet til melk.
