Kostændring er reel og målbar. Det er også området, hvor variationen inden for kategorier oftest overstiger forskellen mellem kategorier, som folk får at vide om.
Hvad er robust
Én opdagelse overlever enhver metodologisk diskussion: oksekød og lam har langt højere emissioner pr. enhed protein end noget andet, hovedsageligt gennem enterisk metan og arealanvendelse. Mejeri følger. Alt andet er langt bagefter.
Gennemgange af miljøbeskyttende kostvaner [4] og af kostmønstre vurderet samlet for sundhed og bæredygtighed [1] bekræfter, at reduktion af ruminantprodukter er den største kostmæssige faktor, og at det generelt stemmer overens med sundhedsanbefalinger i stedet for at konflikte med dem.
Kostændring og emissioner
Hvor det bliver rodet
Under ruminantniveauet bryder enkle rangordninger sammen. Livscyklusvurdering af specifikke produkter viser, at variation inden for en kategori ofte overstiger variation mellem kategorier — de højeste emissionsproducenter af en lav-emissionsfødevare kan overstige de laveste emissionsproducenter af en høj-emissionsfødevare.
- Transport er normalt lille. Fødevaremil er et mindre begreb for de fleste produkter; produktionsmetoden dominerer. Luftfragtede produkter er undtagelsen, og de er sjældent mærket.
- Lokalt er ikke automatisk lavere. Opvarmet drivhusproduktion i nærheden kan overstige markproduktion langt væk plus forsendelse.
- Emballage er normalt lille i forhold til maden og kan reducere den samlede indvirkning ved at forhindre spild.
- Spild er stort. Mad, der kasseres, bærer sit fulde produktionsaftryk og giver intet.
- Sæsonbestemt og uopvarmet slår lokalt. Den nyttige heuristik er ikke afstand, men vækstmetode.
Kulstofmærkning
Kulstofmærkning på fødevarer er blevet undersøgt, og resultaterne afspejler litteraturen om ernæringsmærkning dækket på vores fødevaremærkningsbevis hjemmeside: mærker ændrer adfærd moderat, forståelsen er ujævn, og reformulerings-effekten på producenterne kan være vigtigere end forbrugereffekten.
Den yderligere vanskelighed her er, at et kulstoftal er langt mindre standardiseret end et ernæringstal. To producenter kan beregne meget forskellige tal for det samme produkt ved hjælp af forsvarlige metoder, hvilket gør sammenligning på tværs af produkter mere usikker end mærket antyder.
Hvad ændrer adfærd
Meta-analyse af app-baserede kostinterventioner [3] og arbejde med mindfulness og bæredygtige kostvaner [2] finder de sædvanlige små effekter. Strukturelle faktorer — hvad der er på menuen, hvad der er i øjenhøjde, hvad standardmuligheden er — påvirker forbruget mere pålideligt end information gør.
