Dieetverandering is echt en meetbaar. Het is ook het gebied waar de variatie binnen categorieën vaak groter is dan het verschil tussen categorieën waar mensen over worden geïnformeerd.

Wat is robuust

Één bevinding overleeft elke methodologische discussie: rundvlees en lam hebben per eenheid eiwit veel hogere uitstoot dan iets anders, voornamelijk door enterische methaan en landgebruik. Zuivel volgt. Alles wat anders is, blijft ver achter.

Reviews van milieuvriendelijke diëten [4] en van dieetpatronen die gezamenlijk zijn beoordeeld op gezondheid en duurzaamheid [1] bevestigen dat het verminderen van ruminantproducten de grootste dieetverandering is, en dat dit over het algemeen in lijn is met gezondheidsaanbevelingen in plaats van daarmee in conflict te zijn.

Dieetverandering en uitstoot

Waar het rommelig wordt

Onder de ruminantcategorie breken eenvoudige ranglijsten af. Levenscyclusanalyse van specifieke producten toont aan dat variatie binnen een categorie vaak groter is dan variatie tussen categorieën — de hoogste-impact producenten van een laag-impact voedsel kunnen de laagste-impact producenten van een hoger-impact voedsel overtreffen.

  • Transport is meestal klein. Voedselkilometers zijn een minor term voor de meeste producten; de productiemethode domineert. Luchtvrachtproducten zijn de uitzondering en worden zelden gelabeld.
  • Lokaal is niet automatisch lager. Verwarmde kasproductie in de buurt kan de veldproductie ver weg plus verzending overtreffen.
  • Verpakking is meestal klein in verhouding tot het voedsel, en kan de totale impact verminderen door verspilling te voorkomen.
  • Afval is groot. Voedsel dat wordt weggegooid draagt zijn volledige productievoetafdruk en levert niets op.
  • Seizoensgebonden en ongehitst is beter dan lokaal. De nuttige heuristiek is niet afstand maar teeltmethode.

Koolstoflabeling

Koolstoflabeling op voedsel is bestudeerd, en de bevindingen weerspiegelen de literatuur over voedingslabeling die op onze voedsellabel bewijswebsite is behandeld: labels beïnvloeden gedrag bescheiden, begrip is ongelijkmatig, en het herformuleringseffect op producenten kan belangrijker zijn dan het consumenteneffect.

De extra moeilijkheid hier is dat een koolstofcijfer veel minder gestandaardiseerd is dan een voedingscijfer. Twee producenten kunnen heel verschillende cijfers berekenen voor hetzelfde product met verdedigbare methoden, wat de vergelijking tussen producten onbetrouwbaarder maakt dan het label suggereert.

Wat verandert gedrag

Meta-analyse van app-gebaseerde dieetinterventies [3] en onderzoek naar mindfulness en duurzame diëten [2] vinden de gebruikelijke kleine effecten. Structurele factoren — wat er op het menu staat, wat op ooghoogte is, wat de standaardoptie is — beïnvloeden de consumptie betrouwbaarder dan informatie doet.

Veelgestelde vragen

Moet ik veganistisch worden?
Het vermindert de voedseluitstoot aanzienlijk. Het grootste deel van de haalbare vermindering komt van het verminderen van ruminantvlees en zuivel, wat niet vereist dat je helemaal overstapt.
Zijn voedselkilometers belangrijk?
Meestal veel minder dan de productiemethode. Luchtvrachtproducten zijn de uitzondering.
Is lokaal altijd beter?
Nee. Verwarmde kasproductie lokaal kan de veldproductie plus verzending overtreffen.
Wat betreft haver- versus zuivelmelk?
Plantenmelk is aanzienlijk lager dan zuivel in de LCA-literatuur. Verschillen tussen plantenmelk zijn kleiner dan de kloof naar zuivel.
