Matarbreyting er raunveruleg og mælanleg. Það er einnig svæðið þar sem breytileiki innan flokka fer oft fram úr muninum milli flokka sem fólk er sagt um.
Hvað er traust
Eitt niðurstaðan stendur af öllum aðferðarfræðilegum rökum: nautakjöt og lambakjöt hafa mun hærri losun á einingu próteins en annað, aðallega vegna metanmyndunar í meltingu og landnotkun. Mjólk fylgir. Allt annað er langt á eftir.
Yfirlit yfir umhverfisverndandi mataræði [4] og matarvenjur metnar saman fyrir heilsu og sjálfbærni [1] staðfesta að að draga úr rúmmettuðum vörum er stærsta matarlegu hreyfingin, og að það er almennt í samræmi við heilsuráðleggingar frekar en að stangast á við þær.
Matarbreyting og losun
Hvar það verður flókið
Neðan við rúmmettuðu stigið brotna einfaldar raðir niður. Lífsferilsmat á ákveðnum vörum sýnir að breytileiki innan flokks fer oft fram úr breytileika milli flokka — framleiðendur með mesta áhrif á lága áhrifavöru geta farið fram úr þeim með lægstu áhrifin á hærri áhrifavöru.
- Flutningur er venjulega lítill. Fæðufjarlægð er lítið hugtak fyrir flestar vörur; framleiðsluaðferð ríkir. Loftflutt framleiðsla er undantekningin og það er sjaldan merkt.
- Staðbundið er ekki sjálfkrafa lægra. Heitt gróðurhúsframleiðsla í nágrenninu getur farið fram úr akurframleiðslu langt í burtu auk flutnings.
- Umbúðir eru venjulega litlar miðað við matinn, og geta minnkað heildaráhrifin með því að koma í veg fyrir sóun.
- Sóun er mikil. Matvara sem er hent ber fulla framleiðslufótspor sitt og skilar engu.
- Tímabils- og óheitt er betra en staðbundið. Nothæf heuristika er ekki fjarlægð heldur gróðursetningaraðferð.
Kolefnismerking
Kolefnismerking á mat hefur verið rannsökuð, og niðurstöðurnar endurspegla bókmenntir um næringarmerkingar sem fjallað er um á okkar vefsíðu um matamerkingar: merkingar breyta hegðun lítillega, skilningur er ójafn, og áhrif endurmótunar á framleiðendur gætu skipt meira máli en áhrif á neytendur.
Aukavandamálið hér er að kolefnisfjöldi er mun minna staðlaður en næringartala. Tveir framleiðendur geta reiknað mjög mismunandi tölur fyrir sömu vöru með verjandi aðferðum, sem gerir samanburð á vörum ótryggari en merkingin gefur til kynna.
Hvað breytir hegðun
Meta-analýsa á forritsbyggðum mataríngripum [3] og vinna um hugleiðslu og sjálfbær mataræði [2] finna venjulega litla áhrif. Strúktúralir þættir — hvað er á matseðlinum, hvað er í augnhæð, hvað er sjálfgefið valkostur — hreyfa neyslu áreiðanlegar en upplýsingar gera.
